When I am cooking with Dimples, the aroma in my house makes you r mouth water. It has every member of my family casually strolling by the oven or BBQ to see if it is done yet. NO ONE has this recipe and they will have to find after I am no longer on this Earth. It is the one recipe that I do not share but let me say this, I have been asked for this recipe well over 100 times and the answer is always NO!

Whatever meat we are cooking I massage my rub onto the meat and let it sit for about an hour then I brush on a light coating of Dimples BBQ sauce and the cooking begins. As the meat cooks and the smells waft around the neighborhood and brings my neighbors by to ask what’s cooking, I lightly brush the BBQ sauce throughout the process several times.  By the time dinner is ready, the family is already at the table waiting with forks in hand.  I have never tasted better BBQ!

Mason Jar Salads: How to


Have you ever seen a mason jar salad? They look so awesome. But did you know there is a right way to make one? It is kind of like a science so that you make sure you get the nutrients you need! The layers are designed to get you the most nutrition. I think if I had tried to make one before seeing this article, it probably would have just been thrown together and sure would not have looked as pretty as these.

This tips are from My Fitness Pal, which is one of my favorite fitness apps. You can log your food, water and exercise intake as well as look at your nutrition for the day and log your weight loss progress. I started using it 6 weeks after my bariatric surgery last year and it has helped with every one of the 106 pounds I have lost. It is amazing how much it helps you stay on track to journal your intakes.

Want Juicier Chicken? Here’s how!


Have you ever cooked a whole chicken and when it’s done, it’s a little on the dry side. Or cooked chicken breasts and seems like it takes forever to get them out of the pink ( and dangerous) state only to find they are done but dry? Here are some tips to help you make the perfect chicken.

Grilling time is here and I know I love to cook chicken on the frill but sometimes the grilling dries it out. I usually marinade over night but sometimes that just isn’t enough. If you are going to cook a whole chicken on the grill use kitchen scissors to butterfly , or almost cut in half leaving some so that it folds open like a book. It flattens it out and let’s the juices flow. Add your seasonings and it will so be worth it! When grilling a chicken, it’s best to leave the skin on and place your rubs underneath the skin along with some butter!

Have you tried beer can chicken? Oh Lordy is it good!! The beer makes the chicken mouth-watering good and fall of the bone!  Place the open end of the beer can just inside the chicken and place on the grill. They also make gadgets where you can place any liquid you like inside the can it holds the chicken steady. I have seen them at Bed Bath and Beyond and on Amazon they call them Drunk Chicken Stands  They also have a double beer can holder at Walmart.

I suggest placing an old pie or can pan under the beer can to catch the drippings.  

I use a secret rub that I created ( sorry can’t share) and it makes beer can chicken taste like Heaven. I haven’t even let my kids know what’s in it yet. But everyone raves over it. And I have been told to package and sell it.  You can create your own runs and marinades and those are the key to amazing chicken and any other meat really.

Angel Strawberry Bavarian Cake


Now most of you know that I usually only post recipes that are sugar-free, almost sugar-free or light these days but once in a while a recipe comes along that I just have to share. This one looked so yummy , even from a sugar-free diva, that I had to share it.  It is now my quest to recreate it in a healthier form.  This recipe is from Duncan Hines.  Come back and let us know if you try it and tell us how yummy it is!

 

 

 

 

 

 

 

Angel Strawberry Bavarian Cake

 

Hands-on Time: 40 minutes

Total Time: 6 hours 40 minutes

Servings: 12 slices

Ingredients:

  • 1 package Duncan Hines® Signature Angel Food Cake Mix
  • 1 package (3 oz.) strawberry gelatin
  • 1 cup boiling water
  • 1 package (10 oz.) frozen sweetened sliced strawberries, thawed
  • 1 container (12 oz.) frozen whipped topping, thawed
  • Fresh strawberries for garnish

Directions:

  1. Preheat oven to 350ºF.
  2. Prepare and bake cake mix according to package directions. Cool completely. Cut cake into 1-inch cubes to make 10 cups of cubed cake.
  3. Drain strawberries, reserving juice.
  4. Combine gelatin with boiling water in a small bowl; stir until dissolved. Combine reserved strawberry juice and additional water to equal 1 cup; add to gelatin mixture. Refrigerate until slightly thickened. Remove and beat until foamy.
  5. Fold whipped topping, whipped gelatin mixture and sliced strawberries in large bowl.
  6. Spoon 2 cups strawberry mixture into 10-inch tube pan, evenly top with 3 cups cubed cake. Press down slightly. Continue alternating until pan is filled, ending with strawberry mixture. Refrigerate 4 hours or overnight. Garnish with fresh strawberries.
  7. Baking Tip: Freeze left over unused cake for another dessert.
